The number at the end matters, but the assumptions behind it matter just as much. The Brine Calculator helps you calculate salt and water amounts for the entered brine percentage, then shows supporting values that make the estimate easier to sanity-check before you use it in the kitchen, brewery, party plan, or shopping list.
What this calculator does
The Brine Calculator uses the fields on this page to calculate salt and water amounts for the entered brine percentage. Its primary output is labeled “Brine” and is displayed in g salt. Supporting readouts include Water, Target brine, Vegetable.
How to use it
Enter or select Vegetable, Target brine, Water. Use the units displayed beside each quantity and change only the assumptions that describe your real recipe or event. The Brine Calculator then recalculates the primary result and its supporting values from those visible inputs.
How the calculation works
Salt mass = water mass × target brine percentage, treating 1 L water as about 1 kg. The reverse relation can solve water from a salt amount.
Example
With Vegetable = Cucumber, Target brine = 3.5 %, Water = 1 L, the calculator returns 35 g salt for “Brine.” The same run also shows Water = 1 L; Target brine = 3.5%; Vegetable = cucumber. Changing one input at a time makes it easy to see which assumption is driving the result.
How to interpret the result
For the Brine Calculator, the main output is expressed as g salt. Read it together with the supporting values and the exact inputs you used; a larger or smaller answer only has meaning within this calculator’s specific recipe, serving, or process model.
Limitations and notes
This percentage tool is not a canning or shelf-stable preservation recipe. Fermentation, quick pickling, and canning have different safety requirements; do not reduce required salt or acidity in a tested preservation recipe based only on this calculation.
